Sweet and Spicy Mango Salsa – Ready in Minutes

Mango Salsa – the sweet and spicy, mouth watering golden relish – it is ready in minutes! Enjoy its juicy deliciousness, be it with chips or crackers , on top of tacos, or, perhaps, just by itself, as a tongue-tickling Chaat! So easy to make: it is my favorite go-to salsa whenever mangoes are in season.

Quick-fix and so very versatile

A really simple recipe, with very few ingredients and minimal prep. No cooking involved, no fancy gadgets needed. Mango-lover that I am, I’ve been making this salsa on the fly for years. Best of all, it goes well with any type of cuisine – Indian, Mexican, Thai… Who needs labels, anyway ?! I love it as a topping for my soft tacos and Nachos. I often put it on top of a favorite salad – you simply can’t go wrong with it. Sometimes I mix it with black beans for a colorful and tasty side-dish to accompany my Fiesta Rice. The beans and mangoes deliver lots of protein and fiber, while also complementing the rich colors of the Fiesta Rice. Likewise, alongside Indian Roti-Sabji (pronounce “Roat-ee Sub-jee”), or with rice and Thai curry, it is just as delectable.

If you are a seafood lover, make this sweet and spicy mango salsa to top grilled fish, especially salmon. It also tastes amazing alongside grilled shrimp, on top of a burger patties, or inside a sandwich or a wrap.

The ‘ready-in-minutes’ relish that everyone relishes, this salsa brightens weeknight menus and elevates special-day lunches and dinners. Its rich golden hues add splendor and its tangy sweetness is a sure-fire crowd-pleaser. It’s fun to see someone’s eyes light up when they spot this on the table…. “Ooooh, I can’t wait to have that!”

A final thought regarding “do-ahead” and storage. This salsa tastes best when made just before serving, so I do not recommend making it too early. I suggest you make it no more than a couple of hours before serving. Ideally, polish it off the day you make it. Trust me, it will not taste as good the next day.

Sweet and Spicy Mango Salsa – Ready in Minutes

Diced mango is seasoned with lemon/lime juice, cilantro and chopped green chillies, along with a pinch of salt and sugar. Serve this delicious salsa with tortilla chips, or use as a relish on tacos, salads and more.

Equipment

Ingredients
  

  • 2 cups diced ripe mango any variety- preferably a non-fibrous variety;
  • 2 tsp lemon/lime juice
  • 2 tbsp chopped cilantro
  • 1/2 tsp fresh green chillies – chopped finely any hot peppers – Serrano, Jalapeno, other; adjust quantity as per spiciness level desired
  • 1/4 tsp salt adjust as per preference
  • 1/8 tsp black pepper – freshly ground
  • 1/2 tsp sugar adjust as per preference

Instructions
 

  • Slice the mango and dice about1 cm sized pieces. scrape the seed with a knife or spoon to collect all the ripe juicy pulp sticking to the seed. The little bit of soft pulp gives the salsa its particular texture – the diced pieces hold their shape, then get coated with the soft pulp, which efficiently carries all the seasonings to the pieces.

  • Add and gently mix in the remaining ingredients. Taste-test and adjust salt, spiciness and the tangy taste to your preference.
  • Serve immediately. The salsa starts browning soon after it is made, so it is not a good idea to make it too far in advance. Pair it with chips/crackers, as a stand-alone side-dish with an Indian/Mexican meal, or just dig in and devour as a "Chaat"!
  • Enjoy!

Notes

This salsa is best made just before serving: it starts to brown fairly soon after it is made, although the fresh lemon/lime juice delays that process a little. 
Note: bottled lemon juice is typically not as effective at slowing the browning
Its flavor, too is at its peak immediately after it is made.
Leftovers can be stored up to 2 days in the refrigerator, but the color and flavor will both deteriorate, so it is best to polish it off the day it is made.

    OH MY GOD, this was amazing!! Made it for a girls’ movie night and it was such a huge hit! We paired it with some corn tortillas and my friends were more focused on consuming this salsa than on watching the actual movie. I’ve made it on several more occasions and it has not disappointed once. Thanks for sharing!
